Bacon Parmesan & Chive Egg Clouds

Ingredients
  

4 large eggs

4 strips of bacon, cooked and crumbled

1/2 cup grated Parmesan cheese

1/4 cup fresh chives, finely chopped

Salt and pepper, to taste

1/4 teaspoon smoked paprika (optional)

Olive oil or cooking spray (for baking sheet)

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease it lightly with olive oil or cooking spray.

    Separate the Eggs: Carefully separate the egg whites from the yolks. Place the egg whites in a mixing bowl and the yolks in a separate bowl.

      Whip the Egg Whites: Using a hand mixer or stand mixer, beat the egg whites on medium-high speed until stiff peaks form, about 3-5 minutes. The whites should be glossy and hold their shape.

        Add Cheese and Chives: Gently fold in the grated Parmesan cheese, chopped chives, salt, pepper, and smoked paprika (if using) into the whipped egg whites. Be careful not to deflate the egg whites—mix just until combined.

          Shape the Clouds: Using a large spoon or spatula, scoop the egg white mixture onto the prepared baking sheet, forming 4 cloud-like shapes. Create a small indentation in the center of each cloud to hold the yolk.

            Add the Yolks: Carefully place the reserved egg yolks into the indentations of the egg whites. You can sprinkle more salt and pepper on top of the yolks if desired.

              Top with Bacon: Sprinkle the crumbled bacon evenly over the top of each egg cloud.

                Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the egg whites are golden and set and the yolks are cooked to your desired doneness.

                  Serve: Once done, remove from the oven and let cool slightly. Serve your Bacon Parmesan & Chive Egg Clouds warm, garnished with additional chives if desired.
