8 oz elbow macaroni

6 slices of thick-cut bacon, chopped

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup cream cheese, softened

3 cups milk (whole or 2%)

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs (optional, for topping)

2 tablespoons unsalted butter (for topping, optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 8–10 minutes. Remove the bacon and let it drain on paper towels. Reserve a tablespoon of bacon fat in the skillet.

      Make the Cheese Sauce: In the same skillet with the reserved bacon fat, add flour and cook for 1-2 minutes until lightly browned. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and stir for about 5-7 minutes until the sauce thickens.

        Incorporate Cheeses: Lower the heat and stir in the cream cheese until melted, then gradually add in the sharp cheddar and mozzarella cheese. Mix until completely melted and creamy. Add garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

          Combine: Fold in the cooked macaroni and half of the crispy bacon into the cheese sauce, stirring to coat everything evenly.

            Optional Baking Step: If desired, preheat your oven to 350°F (175°C). Transfer the mac and cheese into a greased baking dish. In a small bowl, melt the butter and mix with the panko breadcrumbs. Sprinkle this mixture evenly over the mac and cheese, and bake for 15-20 minutes until golden brown and bubbly.

              Serve: Remove from the oven (if baked) and let it sit for a few minutes. Garnish with the remaining bacon on top, and enjoy your creamy, cheesy, and bacon-packed delight!
