Bacon Egg and Hash Brown Casserole

8 slices of thick-cut bacon

1 medium onion, diced

1 bell pepper (any color), diced

1 package (20 oz) frozen hash browns, thawed

6 large eggs

1 cup milk (or heavy cream for a richer taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1/4 cup chopped fresh chives or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into bite-sized pieces. Reserve about 2 tablespoons of bacon grease in the skillet.

      Sauté Vegetables: In the same skillet with the reserved bacon grease, add the diced onion and bell pepper. Sauté until the vegetables are soft and translucent, about 5-7 minutes. Remove from heat.

        Mix Everything Together: In a large mixing bowl, combine the thawed hash browns, crumbled bacon, sautéed onion and bell pepper, garlic powder, onion powder, paprika, salt, pepper, and 1 cup of cheddar cheese. Stir until evenly mixed.

          Prepare the Egg Mixture: In a separate bowl, whisk together the eggs and milk until combined. Add a pinch of salt and pepper to taste.

            Assemble the Casserole: In a greased 9x13 inch baking dish, evenly spread the hash brown mixture. Pour the egg mixture over the top, ensuring it seeps through the hash browns. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the casserole is set in the middle.

                Cool and Serve: Let the casserole cool for about 5 minutes before slicing. Garnish with chopped chives or green onions if desired. Serve warm and enjoy your delicious breakfast!
