Bacon Cheddar Gnocchi Soup

4 slices of thick-cut bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

4 cups chicken broth

1 cup half-and-half

1 pound potato gnocchi (store-bought or homemade)

1 cup sharp cheddar cheese, shredded

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the pot.

    Sauté Vegetables: Add the chopped onion, carrots, and celery to the pot. Sauté for about 5-7 minutes, or until the vegetables are soft. Stir in the minced garlic, dried thyme, and smoked paprika, cooking for an additional minute until fragrant.

      Add Broth: Pour in the chicken broth and bring the mixture to a simmer. Let it cook for about 10 minutes to meld the flavors.

        Incorporate Gnocchi: Add the potato gnocchi to the pot and cook according to the package instructions, usually about 2-3 minutes until they float to the surface.

          Create Creamy Base: Reduce the heat to low and stir in the half-and-half. Let it heat through for a couple of minutes but do not boil.

            Melt Cheese: Gradually add the shredded cheddar cheese, stirring until melted and creamy. If the soup is too thick, add more broth or half-and-half to reach your desired consistency.

              Season: Return the crispy bacon to the pot. Season with salt and pepper to taste.

                Garnish and Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread on the side.
