Bacon and Cheddar Breakfast Burritos

6 slices of thick-cut bacon

4 large eggs

1 cup shredded sharp cheddar cheese

1/4 cup milk

1/2 small onion, finely chopped

1/2 bell pepper, diced (any color)

1/2 teaspoon garlic powder

Salt and pepper, to taste

4 large flour tortillas (10-inch)

1/4 cup salsa (optional, for serving)

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy, about 7-10 minutes. Remove the bacon and drain on paper towels, leaving about 1-2 tablespoons of the bacon grease in the skillet.

    Sauté Veggies: In the same skillet with the reserved bacon grease, add the chopped onion and bell pepper. Sauté until the vegetables are soft and translucent, about 4-5 minutes. Season with garlic powder, salt, and pepper.

      Scramble the Eggs: In a bowl, whisk together the eggs and milk. Pour the egg mixture into the skillet with the veggies. Cook on medium heat, stirring gently until the eggs are just set, about 3-4 minutes.

        Add Cheese and Bacon: Crumble the cooked bacon and stir it into the egg and veggie mixture. Sprinkle in the cheddar cheese and fold everything together until the cheese is melted and evenly distributed. Remove from heat.

          Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a portion of the egg mixture into the center of the tortilla. Fold in the sides, then roll it up from the bottom to make a tight burrito. Repeat with remaining tortillas and filling.

            Toast the Burritos (Optional): To add a bit of crunch, you can toast the burritos. Heat the skillet over medium heat and place the burritos seam-side down. Cook for 2-3 minutes on each side until golden brown.
