8 oz pasta (penne or fusilli works well)

2 ripe avocados, peeled and pitted

2 tablespoons lemon juice

1 clove garlic, minced

1/4 cup Greek yogurt (or sour cream)

1/4 cup olive oil

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup corn (fresh, canned, or frozen)

1/4 cup fresh cilantro or parsley, chopped

Optional: Crushed red pepper flakes for heat

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Avocado Dressing: In a mixing bowl, mash the ripe avocados until smooth. Mix in the lemon juice, minced garlic, Greek yogurt, and olive oil until you have a creamy consistency. Season with salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, red onion, corn, and fresh herbs. Pour the avocado dressing over the pasta mixture and toss gently to coat everything evenly.

        Season and Serve: Taste the salad and adjust seasoning with additional salt, pepper, or crushed red pepper if desired. Chill in the refrigerator for about 30 minutes before serving for the flavors to meld.
