Ingredients
  

3 lbs beef chuck roast, cut into large chunks

3 dried guajillo chiles, stemmed and seeded

2 dried ancho chiles, stemmed and seeded

1 dried pasilla chile, stemmed and seeded

4 cloves garlic, minced

1 large onion, quartered

1 tsp cumin seeds

1 tsp black peppercorns

1 tsp dried oregano

2 tsp salt (to taste)

4 cups beef broth

2 bay leaves

1 tbsp apple cider vinegar

1 tbsp olive oil

Fresh cilantro, for garnish

Chopped onions, for garnish

Lime wedges, for serving

Corn tortillas, for serving

Instructions
 

Prepare the Chiles: In a dry skillet over medium heat, lightly toast the guajillo, ancho, and pasilla chiles for about 2 minutes until fragrant. Remove from heat and soak them in hot water for 20 minutes until softened.

    Make the Marinade: In a blender, combine the soaked chiles (along with some of their soaking liquid), minced garlic, quartered onion, cumin seeds, black peppercorns, oregano, salt, and apple cider vinegar. Blend until smooth, creating a vibrant marinade.

      Marinate the Meat: In a large bowl, coat the beef chunks with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.

        Sear the Meat: In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Remove the beef from the marinade, reserving the marinade. Sear the meat on all sides until browned, about 4-5 minutes per side.

          Add Broth and Aromatics: Once the meat is browned, add the reserved marinade, beef broth, bay leaves, and bring to a boil. Reduce heat to low, cover, and simmer for 2-3 hours, or until the meat is tender and easily shredded.

            Shred the Meat: After cooking, remove the meat from the pot and shred it with two forks. Discard any excess fat and return the shredded meat to the pot.

              Final Seasoning: Taste the broth and adjust seasoning with additional salt if needed. Allow the birria to rest for about 10 minutes so the flavors meld.

                Serve: Ladle the birria into bowls, garnishing with chopped cilantro and onions. Serve with lime wedges and warm corn tortillas for dipping or making tacos.
