12 large cloves of garlic, peeled and minced

4 cups chicken or vegetable broth

1 large onion, finely chopped

1 cup heavy cream

3 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 bay leaf

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Crusty bread, for serving

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the minced garlic and chopped onion. Sauté until the onions are translucent and the garlic is fragrant, about 5-7 minutes. Be careful not to let the garlic brown, as it can become bitter.

    Add the Broth: Pour in the chicken or vegetable broth, stirring to combine. Add the bay leaf and thyme, and bring the mixture to a gentle simmer. Cover and let it cook for about 15 minutes to allow the flavors to meld.

      Blend the Soup: Remove the bay leaf from the pot. Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches.

        Incorporate the Cream: Return the pureed soup to the pot (if using a traditional blender) and stir in the heavy cream. Heat the soup over low flame until it is just warmed through. Season with salt and freshly ground black pepper to taste.

          Serve: Ladle the warm soup into bowls. Garnish with chopped parsley and serve with slices of crusty bread for dipping.
