2 cups napa cabbage, finely chopped

1 cup red cabbage, finely chopped

1 cup carrots, grated or julienned

1 red bell pepper, diced

1 cup cucumber, diced

1 cup edamame (shelled)

4 green onions, sliced

1/4 cup fresh cilantro, chopped

1/4 cup sesame seeds (toasted if possible)

1/2 cup roasted peanuts, chopped (optional)

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1 clove garlic, minced

1 teaspoon sriracha (optional for heat)

Instructions
 

Prepare the Salad:

    - In a large mixing bowl, combine napa cabbage, red cabbage, carrots, red bell pepper, cucumber, edamame, green onions, and cilantro.

      Make the Dressing:

        - In a separate smaller bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and sriracha if using. Make sure all ingredients are well combined.

          Toss and Serve:

            - Pour the dressing over the chopped salad ingredients. Toss everything together until the vegetables are evenly coated with the dressing.

              - Sprinkle toasted sesame seeds and chopped roasted peanuts on top before serving for an extra crunch.

                Chill (Optional):

                  - For enhanced flavors, let the salad sit in the fridge for 15-30 minutes before serving. This allows the veggies to absorb the dressing.
