Apple Pie Waffle Fritters

Ingredients
  

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

2 tablespoons sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 cup milk

2 large eggs

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Oil for frying

Optional: whipped cream or ice cream for serving

Instructions
 

In a large mixing bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, and nutmeg.

    In a separate bowl, combine the milk, eggs, and vanilla extract. Mix well.

      Pour the wet ingredients into the dry ingredients, stirring gently until just combined.

        In a small bowl, toss the diced apples with lemon juice. Fold the apples into the batter until evenly distributed.

          Heat oil in a deep frying pan or pot over medium heat (about 350°F or 175°C).

            Using a spoon or cookie scoop, drop batter into the hot oil, forming fritters. Fry in batches, making sure not to overcrowd the pan, for about 2-3 minutes on each side or until golden brown.

              Once cooked, transfer fritters to a paper towel-lined plate to drain excess oil.

                While the fritters cool slightly, mix the powdered sugar and milk in a small bowl until smooth to create the glaze.

                  Drizzle the glaze over the apple pie waffle fritters or dip them in the glaze for extra sweetness.

                    Serve warm, optionally topped with whipped cream or a scoop of ice cream.
