3 cups peeled and chopped fresh apples (such as Granny Smith or Honeycrisp)

1 cup granulated sugar

1 cup brown sugar, packed

3 large eggs

1 cup vegetable oil

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup chopped walnuts or pecans (optional)

1 cup raisins (optional)

Powdered sugar, for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch pan or line it with parchment paper for easier removal.

    Prepare the Apples: In a large bowl, combine the chopped apples with the granulated sugar. Set aside for about 10-15 minutes to allow the juices to release.

      Mix Wet Ingredients: In a medium bowl, whisk together the brown sugar, eggs, vegetable oil, and vanilla extract until well combined and slightly frothy.

        Combine Dry Ingredients: In another bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

            Add Apples and Extras: Fold in the sugared apples, nuts, and raisins until evenly distributed throughout the batter.

              Bake the Cake: Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

                Cool Down: Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
