Apple cider plays a pivotal role in elevating the flavor profile of baked goods. Unlike regular apples, apple cider is concentrated and rich, offering a deep apple essence that enhances the cookies' overall taste. When used in baking, it not only imparts a delicious sweetness but also provides moisture that keeps the cookies soft and tender. This moistness is particularly important in cookie recipes, where achieving the right balance between chewy and fluffy can be the key to success.

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

½ cup apple cider

1 cup chopped dried apples (or apple pieces)

½ cup walnuts or pecans, chopped (optional)

Powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt until well blended.

Combine Mixtures: Gradually add the dry ingredients into the wet mixture, mixing until just combined.

Incorporate Cider and Apples: Stir in the apple cider, chopped dried apples, and nuts (if using) until evenly distributed.

Scoop the Dough: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges start to turn golden, but the centers are still soft.

Cool the Cookies: Remove the baking sheet from the oven and let the cookies cool on the sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Dust with Powdered Sugar (Optional): If desired, dust cooled cookies with powdered sugar before serving for a festive touch.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 24 cookies
