Air Fryer Parmesan Crusted Chicken with Mayo

A delightful twist on a classic dish.

Ingredients

2 boneless, skinless chicken breasts

1/2 cup mayonnaise

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko preferred for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Begin by rinsing the chicken breasts under cold water and patting them dry with paper towels. This helps the coating adhere better.

Make the Coating Mixture: In a medium bowl, combine the mayonnaise, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until smooth and uniform.

Coat the Chicken: Take each chicken breast and dip it into the mayo mixture, ensuring that it is fully coated on both sides.

Prepare the Breading: In another bowl, mix the grated Parmesan cheese and breadcrumbs together. Press the coated chicken breasts into the mixture, making sure to cover all sides generously.

Preheat the Air Fryer: Preheat your air fryer to 380°F (190°C) for about 5 minutes.

Cook the Chicken: Place the coated chicken breasts into the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway through, until they are golden brown and have reached an internal temperature of 165°F (75°C).

Serve: Once cooked, remove the chicken from the air fryer. Let it rest for a couple of minutes. Garnish with freshly chopped parsley before slicing, and serve hot with your choice of dipping sauce or salad.
