1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Cooking spray (coconut oil spray recommended)

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are completely dried for a crispier finish.

    Set Up Breading Station: In three separate shallow bowls, place the flour in the first bowl. In the second bowl, whisk the eggs until fully combined. In the third bowl, combine the shredded coconut, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure an even distribution of the seasonings.

      Coat the Shrimp: Take each shrimp and first dredge it in the flour, shaking off any excess. Then dip it in the whisked eggs, allowing the excess to drip off. Finally, coat the shrimp in the coconut-panko mixture, pressing it lightly to adhere. Place the breaded shrimp on a plate or parchment-lined tray. Repeat this process until all shrimp are coated.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Cooking the Shrimp: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated shrimp in a single layer in the basket, making sure they do not touch each other (you may need to do this in batches). Spray the tops of the shrimp lightly with cooking spray.
