Gnocchi has a rich history that dates back to the Roman Empire, where it was first crafted as a simple pasta made from flour and water. Over the centuries, this dish has evolved, and today, it is most commonly made with potatoes, flour, and egg. The name "gnocchi" is derived from the Italian word "nocchio," meaning a knot in wood, which reflects the irregular shapes of these dumplings.

Ingredients

1 package (16 oz) potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon salt

Freshly ground black pepper, to taste

1 tablespoon fresh basil, chopped (plus more for garnish)

1 large burrata cheese ball

Grated Parmesan cheese, for serving

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. They should float to the top, which typically takes about 2-3 minutes. Once cooked, strain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

Make the Sauce: Pour in the crushed tomatoes and cook for 3-4 minutes, allowing it to simmer. Then stir in the heavy cream, oregano, salt, and pepper. Simmer for another 5 minutes until the sauce thickens slightly.

Combine: Add the cooked gnocchi to the skillet with the creamy tomato sauce. Gently stir until the gnocchi are well coated. Fold in the fresh basil.

Serve: Transfer the creamy tomato gnocchi to bowls. Tear the burrata and place it on top of each serving, allowing its creaminess to mix with the sauce. Finish with a sprinkle of grated Parmesan cheese and extra fresh basil for garnish.
