Ingredients

2 ripe bananas, mashed

1 cup old-fashioned rolled oats

1/2 cup natural peanut butter or almond butter

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, mash the ripe bananas until smooth. Ensure there are no lumps for a good texture in your cookies.

Stir in the rolled oats until fully combined, then fold in the peanut or almond butter until the mixture is homogenous. The dough should be thick but sticky; you can add a pinch of salt or a dash of cinnamon for extra flavor if desired.

Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a fork or your hand, as they will not spread much during baking.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
