200g fresh noodles (wheat or rice)

4 tablespoons olive oil

4 garlic cloves, thinly sliced

2 teaspoons red pepper flakes (adjust to taste)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

2 spring onions, finely chopped

Fresh cilantro, for garnish (optional)

Salt, to taste

Cook the Noodles: In a large pot of boiling salted water, cook the fresh noodles according to package instructions. Generally, this will take about 2-3 minutes. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Garlic Chili Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced garlic and sauté for 1-2 minutes, until golden and fragrant. Be careful not to burn the garlic.

      Add Spice: Stir in the red pepper flakes and cook for an additional 30 seconds to release the flavors into the oil.

        Combine Flavors: Remove the skillet from heat and carefully add the soy sauce, sesame oil, rice vinegar, and sugar to the garlic chili oil mixture. Stir to combine, and adjust salt if needed.

          Toss the Noodles: Add the cooked noodles to the skillet and toss them in the garlic chili oil mixture until they are well coated. If you prefer them spicy, feel free to add more red pepper flakes at this point.

            Finish: Sprinkle the finely chopped spring onions over the noodles and give them one last toss.
